Mexican Pizza is Back Soon! Here's an At-Home Hack While We Wait

Taco Bell fans in Tyler, Longview, Jacksonville, Kilgore, and Lindale, Texas--and all over East Texas are rejoicing today upon hearing the news that our beloved Mexican Pizza is making its return in May!

I'll be honest, and if it sounds petty I do apologize: When Taco Bell announced they'd be removing the Mexican Pizza from the menu I felt genuinely crestfallen. I know, I know it's just a fast-food restaurant flinging cheap, but delicious food our way but STILL...

When we heard they'd removed the MexiMelt and the Tostada from the menu, that was bad enough. But taking away our Mexican Pizza? Well, that felt downright cruel. ;)

There's just something about those fried, crispy layers covered in refried beans and taco beef, covered in melted cheese, tomatoes, and OMG. It's really just the best thing on their menu--or WAS--in my opinion.

Why did Taco Bell take the Mexican Pizza off the menu to begin with?

We'd heard the main reason they'd decided to remove this fan fave from the menu was that they were trying to be more "eco-friendly" and the packaging for the Mexican Pizza (like the tostada) just wasn't ideal. I don't know if all of that is true or not. Honestly, I wondered if it was just a ploy to create a sense of urgency among the Taco Bell fan base--similarly to what McDonald's does with that disgusting McRib. (ER...I mean...DELICIOUS McRib.)

Whatever the case, we're glad it's coming back. The rumor mill says you should start seeing it again coming May 19.

In the meantime, as some of us grieved the loss of the Mexican Pizza, some creative culinary artists decided to create some at-home hacks that we've come to adore. Frankly, some of these rival the TB original.
