Make This Dip And Have a Prosperous 2019
Black-eyed peas are a good luck food that many people eat on New Year's Day, and if you make this dip you can keep the string of luck going for a week or more. With the help of Fritos, which makes it an even bigger win.
This recipe takes some chopping, but once you're past that you just throw all the canned things together and let it soak in the marinade for a few hours. And then eat it with any chips, but Fritos are the best! I've been making this dip for years, and sometimes to save a carb I'll skip the chips and eat it with a spoon straight out of the container. It's got a lot of fiber and Vitamin C in addition to the luck.
Jen's Texas Caviar
1 can black-eyed peas
1 can black beans
1 can pinto beans
1 can white sweet corn
1 small jar pimentos
2-3 diced jalapenos
1 cup green, red, yellow bell peppers (or whatever colors you want)
1 cup diced celery
1 red onion
Combine all of those ingredients in a container, and leave room for the marinade.
Bring these to a boil:
1 cup sugar
1/2 cup olive oil
3/4 cup cider vinegar
1 Tablespoon water
1 teaspoon salt
1/2 teaspoon pepper
After you bring those to a boil, let it cool and then pour over the veggies. Let the whole mixture cool for at least an hour, or overnight. Then drain off the marinade and serve with chips.
This dip is great for football parties too. Happy New Year!
