Houston, Texas is the largest city in the Lone Star State and the second largest metro by total population, so it would stand to reason that you would find a very large, reliable, established butcher shop because we are the beef state after all. Texas is known the world over for our incredibly diligent and innovative process when it comes to the low and slow delicacy of smoked meats, so it would stand to reason that quality so pristine would be provided by a butcher shop with similar clout.

Growing up, the one place you were sure to find the largest gathering outside of the morning coffee cafe of old and semi-retired ranchers and farmers was the local meat locker where you could process your harvested deer or birds, and also find the freshest chicken fried steak, tenderloin, or fried chicken.
