Here's an idea, if you feel like branching out from the beer can chicken tradition on Memorial Day.

I've been making Tequila Lime Chicken for years, and it's always a hit and it's easy to make.  The only way to mess up, is if you rub your eyes after handling the jalapenos. That hurts.

Tequila Lime Chicken is all about the sauce.  If you want to grill the chicken in the back yard, put 4 to 6 chicken breasts on the barbie, and when they're done give them a minute or two in the skillet inside on the stove, where you're making the sauce.  I like to dice up the breasts when they're done cooking, and let them soak in the tequila lime sauce so they get good and drenched . You could use this sauce on a whole bird too.  It's up to you.

For the Tequila Lime Sauce:

One jalapeno, seeded and diced (If you like a lot of spice you can leave the seeds in)

One small onion

2/3 cup of your favorite tequila

Juice from two limes, plus some of the zest for extra flavor

Saute the onions and jalapeno pieces until they're soft, add the lime juice, zest, and tequila, and cook for 2 to 3 minutes.  Add the cooked chicken, and you're done.

The chicken is great with a simple side of rice, or you can serve it in tacos with avocados, on chips with a little Monterrey jack cheese, or with a side of black beans.

And set aside a little of that tequila for some margaritas.
